A REGENERATIVE SUPPLY OF AGAVE

ULTRAMUNDO is produced exclusively with wild Maguey Lamparillo (A. Asperrima) from our 24,000-acre Pelayo Ranch in Mapimí, Durango, in the region of La Zona del Silencio. The property is home to a large population of this agave. We ensure it will continue to be by allowing at least 20% of our mature agave to flower and seed each year.

More than mezcal

More than a great mezcal, Ultramundo is an agroforestry project.

We seek to give back to Earth everything we obtain from it. We’re attempting to foster a balanced relationship with nature. We’re trying to create good jobs for the local community — jobs that preserve the artisan traditions of the region — and leave enough of the natural environment in place that it can regenerate itself.

PELAYO RANCH

Initially dedicated to the breeding of stallions in a regenerative livestock system, Pelayo Ranch is home to a great biodiversity of endemic flora and fauna. The cows, along with the deer and wild boars, participate in the mezcal process — about 15% of the agaves we harvest have been caponed by the hungry animals in this semi-arid ecosystem.

COOKING:

Underground, volcanic stone-lined pit oven with mesquite and pine firewood for three days.

FERMENTATION:

Wild, ambient yeast in open-air, in-ground, oak-lined wells for two to four days (depending on the season).

AGAVE:

100% Maguey Lamparillo (A. Asperrima)
100% caponed upon reaching maturity, generally at 15 years, and left in ground for 4-10 additional months.

MILLING:

By hand with an ax.

DISTILLATION:

Twice in a wood-fired copper pot with an oak wood condenser and a copper coil.

zona del silencio

We are inspired by the flora and fauna of La Zona del Silencio (The Zone of Silence), in which our ranch is located. It’s part of the natural protected area of the Mapimí Biosphere within the Chihuahuan desert and right in the Trine Vertex: the intersection between the Mexican states of Durango, Chihuahua, and Coahuila.

The peculiar electromagnetic and radioactive characteristics of the area have led to a wide variety of outlandish stories. Many people believe this place is a sort of portal or window to The Ultramundo (The Overworld).

What we know with certainty is that La Zona del Silencio is home to the endangered desert tortoise. We feature this irrepressible animal on our label, and we donate funds every year to help preserve the honorable species.
